I have wanted these for a long time, but the price kept putting me off. Now the price seems to have come down a bit and I took the plunge a couple weeks ago. I want to thank KitchenAid for having a channel on Youtube. I was able to watch them demonstrate a simple recipe with 3 1/2 cups flour, 4 eggs, a bit of salt, and water only as needed to get the correct consistency. I have to tell you, it worked well. My very first attempt, and I made some wonderful spaghetti noodles with this set.
My first piece went through the wide setting okay, but the subsequent ones wanted to tear and came out looking more like tatted lace. But I soon learned that is not a deal killer. Just keep folding whatever comes out, in half, then feed the crease back through on the wide setting until a solid sheet forms. After you get to that point, you can begin to thin it out.
I also make home made corn and flour tortillas, but my press doesn't get them thin enough to fry into chips. So, I'm going to let the roller thin my masa out for me into very thin sheets that I can then cut into triangles and fry into chips.
I would agree with the other reviewers that having a free hand to work both the input and output makes life much easier.

I have had these now for a while and honestly, I don't know why I didn't buy them sooner. Making fresh pasta is wonderful, but can be a messy, time consuming experience. I also have a hand crank Atlas machine that I've used for years and it does a great job as well. The difference that having the rollers for the Kitchenaid is that it gives you a free hand. It really works well when you have one hand for feeding into the rollers/cutters and another for catching what comes out the other side. It is suspended higher than the hand crank model that is mere inches off the counter or table. And this isn't for just rolling pasta, it also works for home made crackers! No one would be disappointed purchasing these. They are well built, and with proper care, will provide generations of use, just like the Kitchenaid. I have no regrets on this purchase, other than wishing I had done it years ago!
